I had never done it before (no I don’t mean bikini hair removal ), but am completely intrigued by the possibility. My friend was over the other day and started eyeing my maple tree up and down. You’ve never tapped that tree? she said. I had absolutely no idea what she was talking about. Huh? I said. That is a great maple tree, you can tap that and get some really nice maple syrup from it.

This is when I really started paying attention. We love maple syrup, it is the staple of our Sunday morning pancakes. It started when the kids were young, and even though they have left, and my grocery bill has decreased significantly, we still enjoy blueberry pancakes with real maple syrup on a Sunday morning.

It is really easy, my friend says, you simply drill a hole into the tree, and then place a tap into the tree. You hang a bucket from the tap and then put over a protective cover to keep bits of debris out.

The sap will run best out of the tree after a very cold night followed by a nice warm day. You have to move the holes after a while as the tree will heal around them and no sap will run that way after a time. The sap is then boiled down and reduced into a syrup.

My friend noticed that the tree we had was nice and mature, probably between fifty and a hundred years old. We just had never thought about tapping it before, but after the first run, we are now completely addicted to home made maple syrup. We are scouting other trees on our land with the hopes of being able to produce enough to give as gifts to friends and family.
